Beans Macroni Salad

INGREDIENTS
Macroni 1/2 cup 
Cowpea (boiled) 1/2 cup
Onion 1 (thinly sliced)
Tomatoes 2 small (cut into wedges)
Onion stalk 1 (sliced)
Coriander leaves To garnish
For Dressing :  
Lemon juice 2 Tbsp
Mustard 1/2 tsp
Coriander leaves 1 Tbsp
Garlic  1 clove (crushed)
Salt, mustard & peeper To taste
    
METHOD
1. Cook macaroni in salted in salad water, transfer to a large serving bowl.
2. Add beans (cowpea), onions, onion stalk, tomatoes.
3. To prepare dressing combine all ingredients in a jar & shake well.
4. Pour dressing over salad, toss thoroughly & add salt & peeper. Cover & chill.
5.  For serving toss again lightly & garnish with coriander leaves.
